POSITION INFO:
Exclusive Lodge off the coast of Mozambique is recruiting an Executive Chef/Trainer with 5* lodge/island experience.
Experience required:
Hospitality
Food trends
The surrounding communities
The country
Experience in the service industry especially in dealing with guests and staff
At least 3+ years relevant experience as an Exec Chef
Passion for creating fabulous food
Duties include:
Kitchen Hygiene standards set for the Lodge
Responsible for training chefs & implementing kitchen standards
Correct chemicals and sufficient cleaning materials to be in stock at all times
Presentation as discussed
Creative Beach Banqueting
Proactive Maintenance
Good communication
Accurate stock controls and stock rotation
Good administration
Responsible for all food orders, storerooms and fridges and deep freezes
Left-over management
All food going out to guests at any time to be checked by chef
Minimal traffic through kitchen
Rain management plan in place
Canteen organized
Good interaction with Guests
Good discipline and fair treatment
