Beautiful Boutique Safari Lodge is in need of a Superb ASSISTANT HEAD CHEF

POSITION INFO:
Candidate requirements:

• Relevant qualifications from a recognized culinary institution.
• At least 3–5 years of experience in a similar role, preferably in luxury safari lodges, boutique hotels, or fine dining establishments.
• Strong understanding of South African and international cuisine, with the ability to incorporate local ingredients and flavors.
• Experience in creating seasonal and bespoke menus, including catering to dietary restrictions and preferences.
• Expertise in plating and presentation, maintaining high aesthetic and quality standards.
• Ability to support the Head Chef in managing the kitchen team and training junior staff.
• Proficiency in kitchen operations, stock control, and inventory management.
• Strong knowledge of food safety regulations, with experience implementing and maintaining hygiene standards (HACCP or similar certifications are a plus).
• Experience with food costing, portion control, and minimizing waste.
• Capability to work in remote locations with limited resources while maintaining high standards.
• Enthusiastic about providing exceptional dining experiences for guests in a safari setting.
• Innovative in menu design, incorporating local and seasonal produce.
• Collaborative approach to working with other departments in the lodge.
• Ability to work long hours, especially during peak seasons.
• Proficiency in English (additional local or international languages are an advantage).
• Willingness to live and work in a remote setting with varying schedules.
